Zucchini & Parmesan Soup

There’s been many times I’ve mentioned my Zucchini & Parmesan Soup here on the blog and across social media.  I think it’s high time I shared the recipe!  It’s a family favourite!  So delicious!  It goes very quickly in this house, so I’ve taken to cooking up double batches of it so that it lasts longer.  I’m sure you will love it too.  One batch serves our family of five with leftovers.  Happy cooking!

 

Zucchini and Parmesan Soup
A quick and easy, family favourite winter soup!

Ingredients
  1. 2 tablespoons Olive Oil
  2. 1 Brown Onion chopped
  3. 2 cloves Garlic crushed
  4. 1 tablespoon chopped fresh Thyme leaves
  5. 5 cups Chicken Stock
  6. 3 (or 440g) potatoes chopped into 1 1/2 cm pieces
  7. 700g Zucchini, thickly sliced
  8. 1 cup chopped fresh Continental Parsley
  9. 1/2 cup shredded Parmesan
  10. 1/4 cup Sour Cream (I use sour lite cream)
  11. Extra Parmesan and crusty bread to serve
Instructions
  1. Heat oil
  2. Add onion, garlic & thyme
  3. Cook 5 mins
  4. Add stock and potatoes
  5. Cook 10 mins or until potatoes are tender
  6. Add zucchini
  7. Cook till soft
  8. Remove from heat
  9. Stir in parsley, parmesan and sour cream
  10. Whiz with stick blender

    It’s the perfect weather for soup right now. I’ve make a zucchini and potato soup in the Thermomix and it sounds scrumptiously similar! I love the video too – just souper!

      There is potato in this soup so yes your soup does sound like it could be very similar! LOL – just souper! You are clever Sammie! 🙂

    Sounds absolutely delicious. Zucchinis are my favourite vegetable. I might try this tonight replacing the chicken stock with vegetable stock. Thanks! #teamIBOT

      To be honest, it doesn’t even taste like zucchini to me. It’s creamy and yummy and I think you would love it! 🙂

    Oh yum … you had me at zucchini and parmesan. Mr 23 is only just starting to eat zucchini if I make them into chips in the air fryer, or add some to a stir fry. But he still refuses to eat my zucchini slice. I wonder if he would like this soup?!

      My boys (24) LOVE this soup so pretty sure yours might too! What is an air fryer? I have no idea and obviously don’t have one! lol

    I’ve started making my own stock (and use it as a soup basically with some noodles, frozen veg and chicken bits when sick or run down) but soup soup is still new to me!! This looks really easy though and I love zuchchini so I’ll have to try this.

      Making your own stock is such a yummy and healthy option. Love that idea, and just adding the veg and chicken and so forth. Hope you like this soup if you give it a try! 🙂
